Fiber Foods developed a technology to dehydrate young jackfruit* into a new, clean, allergen free ingredient for the alternative- and blended meat industry (patent pending).
*) Green or young jackfruit comes from the jackfruit tree, a cousin of the fig tree, mulberry tree, and breadfruit family that grows originally in Southeast Asia but currently in many countries along the equator. The jackfruit looks like an oblong honeydew melon or large mango.
The word "jackfruit" comes from the Portuguese word jaca, which 16th-century explorers derived from their pronunciation of the Malaysian name for the fruit, chakka.
Some people confuse the jackfruit with the durian fruit, which looks similar, but there is a large difference. Durian has a strong odor that may not be pleasant to everyone; jackfruit smells sweet.
Durian fruits are also much smaller than jackfruit; and the outside of durian may have spiky "thorns," while a jackfruit has smooth bumps on its surface. PrimeJack® is made from young unripe, also called, green or baby jackfruit.
PrimeJack® is the name of the unique dehydrated young jackfruit product, which is currently offered in 3 standard shapes and in bespoke sizes and colors for bigger volumes by Fiber Foods.
As much as PrimeJack® is clean and minimally processed, during the past 3 years expertise and technologies have been developed to turn this young fruit into a stable ingredient that can be produced on a large scale and in various shapes.

Research and development in East Africa and The Netherlands
PrimeJack® is clean and minimally processed. During the past 3 years expertise and technologies have been developed to turn this young fruit into a stable ingredient that can be produced on a large scale and in various shapes. Fiber Foods has established a production line, a lab and a research team in East Africa to increase efficiencies in the growing, harvesting and processing of jackfruit and to develop new PrimeJack products.
In the lab in the Netherlands, Food Technologist Diederik Hoeve designs new applications together with clients and together with partner companies we develop new ingredients based on PrimeJack in combination with other clean plant-based ingredients.

Our PrimeJack® jackfruit is harvested, peeled, cut and dried at source in Africa.
